Onion Jam & Pancetta Pizza

INGREDIENTS

For the Base

1 cup self raising flour

1/2 cup Greek yoghurt

1 tbsp olive oil

Good pinch or salt

 

Toppings

2 cloves of garlic, chopped

2 tbsp olive oil

1/2 cup parmesan, grated

1/4 cup parsley, chopped

100g fresh mozzarella

1/3 jar of my Onion Jam

100g pancetta

3 eggs

Cracked black pepper

Method
  1. To make the base, mix the flour, yoghurt, olive oil and salt together in a bowl to combine. On a well floured bench, knead the dough until soft and elastic, adding more flour if needed. Roll out to desired pizza shape and thickness. Place onto tray or pizza stone.
  2. Mix garlic and oil together and spread onto pizza base. Top with 1/2 of the parmesan, 1/2 of the parsley, mozzarella, Onion Jam and pancetta. Crack eggs on top and sprinkle with remaining parmesan and parsley. Finish with a good pinch of cracked black pepper.
  3. Cook into your pizza oven, weber or oven at a 250 degrees for 10 minutes or until golden and crispy.
