Beef Meatball and Mushroom Pizza

Everyone loves pizza! And here is my hot tip for a super simple, quick and easy pizza dough from scratch that doesn’t require any resting or proving. You can have this delicious pizza on the table in no time at all. The combination of the tomato base, mushrooms, fresh mozzarella and juicy meatballs is sure to become a regular at any family pizza night.
INGREDIENTS

For the dough

2 cups self raising flour, plus extra for dusting

1 cup Greek Yoghurt

2 tbsp olive oil

1 tsp salt

 

Other

½ cup thick pasta sauce, tomato paste or pizza sauce

6 brown swiss mushrooms, sliced

1 pack Beef Meatballs

200g fresh mozzarella

2 tsp dried italian herbs

Fresh basil leaves to garnish

Method
  1. In a large bowl, add the two cups of self raising flour, greek yogurt, olive oil and salt. Mix with a wooden spoon until starting to come together.
  2. Dust a clean bench with extra flour and tip the mix onto the bench. Knead until the dough is soft and bouncy. This may take 5 or so minutes. Add extra flour if the dough is becoming too wet.
  3. Divide the dough into two. Roll the dough out to make two thin round pizza bases. Place onto oiled pizza trays.
  4. Spread each base with the pasta sauce and sprinkle on the sliced mushrooms. Break the meatballs in half and place on the pizzas. Break up the fresh mozzarella and place on the pizzas. Sprinkle each with dried Italian Herbs.
  5. Cook in a super hot oven or pizza oven until cooked and browned.
  6. Serve, garnished with fresh basil leaves.
