For the stuffing
3 cups of breadcrumbs (I used left over Irrewarra sourdough blitzed in the food processor)
1 leek, sliced, white part only
3 gloves of garlic, finely chopped
50g of Inglenook butter
1 tablespoon of Mt Zero Olive oil
1 cup dried apricots, roughly chopped
1 cup dried cranberries, roughly chopped
100g packet of pistachios, roughly chopped
1/2 cup chopped parsley
1/4 cup chopped sage
Zest and juice of 1 lemon & orange
Good pinch of salt and pepper
For the chicken
1 whole raw chicken
A good drizzle of Mt Zero Olive Oil
A large pinch of salt & pepper
